This Festive Bikini – How to Make It

We present a simplified take on a drink featured on a new cocktail list. This is a party-sized prepared mix that is loaded with the flavours of a festive period, which makes it ideal for hosting a holiday party. Reserve the remaining citrus syrup for breakfast cocktails, desserts, or for another batch of this cocktail.

Bikini Recipe

Makes enough for 10 guests

To make the Citrus Syrup (produces 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

To make the Cocktail (produces 850ml, to serve 10)

400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (see above)
Fresh cranberries, to garnish
Mandarin essential oil, to finish

Instructions

To prepare the Cordial: Place the listed components in a pot, heat until it reaches a simmer, agitating so the sugar melts. Next, turn off the stove allowing it to cool down entirely. Pour to a sealable bottle, close it and refrigerate it in the refrigerator, where it will keep for around four weeks.

For the Premix: Mix every spirits and syrup into a sizeable container, allow it to infuse for an hour, then pass it through best through muslin, making it fully clarified.

To serve: Measure 85ml of the cocktail base to a cocktail shaker containing ice, and agitate carefully for a minute to cool it down. Pour into a frosted cocktail glass or equivalent, top with the cranberries and finish with a light spray of the essential oil over the drink.
